Legnoart's Ceramic Knives are very special tools for the discriminating cook. The blades are made of Zirconium Oxide by Kyocera, Japan. They are and will remain very sharp. They impart no metaillic taste to foods, and are perfect for working with acidic fruits and vegetables.
Used for slicing and vegetable work, these knives are not designed for heavy chopping and are somewhat fragile, yet strong. Wash by hand to preserve the handles and to protect the blades. To occasionally hone, we suggest a diamond steel.
